Ingredients
4 skinless and boneless chicken breast fillets, cut into goujons
250g Rice Krispie Style Cereal
Butter, for greasing
1 Jar Smokey Chipotle Mayonnaise
Method
Preheat the oven to 200°C and lightly grease the baking tray. Put the cereal and Smokey Chipotle BBQ Rub in a bowl and crumble with your fingers or end of a rolling pin until lightly crushed. Put the Smokey Chipotle Mayo and seasoned crushed cereal mix in 2 separate shallow bowls, ready for coating the chicken. Dip each piece of chicken first in the mayonnaise, shaking off any excess, before dipping in the crushed cereal. Place the dipped chicken on the prepared baking tray and bake in the preheated oven for 35 minutes until golden, turning half way through cooking. Serve with Smokey Chipotle Mayo and Chipotle & Bourbon BBQ Sauce on the side for dipping these crispy delights.
