The simplest dishes are always the best and a frittata is a great way of using up any leftover bits in the fridge. At Smokey HQ we call it a ‘Holiday frittata’ as there’s always eggs in the fridge and lots of things in the fridge to use up before we go away on holiday.
On this occasion we had some cooked new potatoes which were sliced and thrown in the pan with a little oil. We dusted over some Piri Piri BBQ Rub and finished off a bag of spinach and some spring onion. Whisk up some eggs and pour over the top. Finish with grated cheese and chunks of N’duja and put under the grill until golden brown. Serve with a tomato, cucumber salad and a good dollop of our Scotch Bonnet Chilli Jam.
Use cherry tomatoes, chorizo, bits of brocolli, spring onion. As long as you’ve got eggs, use up anything you have to hand. A great dish for a Summer’s day and to get you in the holiday mood.
