Our Buffalo Dust BBQ Rub is made for chicken. Get it on wings, strips and thighs. You can also dust over fries or create and amazing crust topping on your mac ‘n’ cheese. It highlights those familiar buffalo flavours of cayenne, butter & that all important tang.
Cooking wings is super easy and these buffalo chicken wings don’t disappoint.
We took 1 kg of chicken wings and separated the drum from the flat. In a seal bag (zip lock bag) which are great for marinating, we added the wings a tablespoon of cornflour and 2 tablespoons of Buffalo Dust BBQ Rub. Massage the rub around the wings and leave in the fridge overnight. If you’re in a rush, don’t worry you can cook them straight away.
These were cooked indirectly in the Kamado Joe Classic 3 at around 160c with a chunk of cherry wood for additional smoke. After around 20-30 minutes the chicken had taken on some nice smoke flavour. We could have finished them off in the Kamodo Joe to crisp up further but decided to drop them in the deep fryer for a few minutes to get them nice and crispy. The wings were then finished with a final dusting of rub, giving them a toss to ensure a nice covering. This just brings out the flavour even more. Go buffalo or go home! Toss them in buffalo sauce for that extra addictive kick!
