If you’re like me then you’ve got to love lamb ribs on the barbecue. They get forgotten about a lot of the time and are not always readily available in the shops. Our Greek Gyros BBQ Rub works great with all cuts of lamb. With a blend of 19 herbs and spices, this rub really brings out and compliments the flavours of the lamb, especially the mint, oregano, garlic and thyme.
Ingredients;
- 1kg Lamb Ribs
- Greek Gyros BBQ Rub
- Oil
Enjoy with a few Mediterranean style sides, such as cous cous, tzatziki or Greek salad.
- Take 1kg of lamb ribs and drizzle over a little oil. Take our Greek Gyros BBQ Rub and dust liberally over the lamb (about 20-25g should be plenty). Mix well and leave to marinate for an hour or two in the fridge or overnight if you have the time.
- Take the lamb out of the fridge about an hour before you are ready to cook them to allow them to come up to temperature.
- Cook them on the BBQ indirect (brush the coals to one side so they’re not directly underneath the lamb) with the lid on for approx 40 minutes at 220c, turning them half way through.
- To finish, move the ribs directly over the hot coals and keep turning them for a few seconds on each side until the lamb fat is nice and crispy. Be careful not to let them burn as the flames will flare up as the lamb fat drips down. Once they’re cooked to perfection enjoy with all your favourite Mediterranean BBQ sides such as cous cous, tzatziki and dips.
