Few seafood dishes can match the luxurious elegance and flavour of grilled lobster tails. Picture succulent lobster meat, kissed by flames, and infused with a vibrant lemon rub. Our simple recipe combines the natural sweetness of lobster tails with the freshness of The Smokey Carter’s new Lemon SPG rub. Whether you’re hosting a special dinner or firing up the barbecue for a weekend feast, these lobster tails are guaranteed to leave a lasting impression.



Ingredients (serves 2):
- 2 lobster tails (defrosted if frozen)
- Lemon SPG Rub from The Smokey Carter
Method:
- Use sharp kitchen scissors to cut along the top of the lobster shells. Once you’ve created this opening, gently open the top shell, and wiggle the flesh loose from the shell without completely removing it.
- Brush the lobster with olive oil and generously sprinkle it with the Lemon SPG rub. Let it rest for at least 30 minutes.
- Prepare your BBQ for cooking and place the lobster, shell side up, directly over the coals. Grill for 5 minutes.
- After 5 minutes, flip the lobster and grill for an additional 5 minutes.
- Remove the lobster from the grill, plate it up, and serve with some samphire. You can cook the samphire simply in butter. I also served this with a crab risotto but you could go all out with a surf and turf experience.
