Who doesn’t love a hotdog cooked on the BBQ. These Budvar lager braised onions are packed with flavour from our South Carolina BBQ Rub, Dijon and wholegrain mustard. Cooked down with Budvar lager for these rich mustardy onions. Soft and delicious on hotdogs with mustard and ketchup. Washed down with the perfect pint of Budvar Czech Lager.


Ingredients:
- 2–3 large onions, thinly sliced
- 1–2 tbsp olive oil
- 1 tbsp South Carolina BBQ rub
- 1 tsp Dijon mustard
- 1 tsp wholegrain mustard
- 400ml Budvar Czech beer
- Salt & pepper to taste
- Hotdogs (Ours were from Sosij)
- Ketchup & mustard
- Brioche buns


Instructions:
- Preheat your BBQ
- Get your grill to medium heat (175–200°C).
- Place the cast iron skillet directly on the grates to preheat while you prep the onions.
- Slice the onions
- Peel and slice your onions
- Sauté in the skillet
- Add olive oil to the hot skillet.
- Toss in the onions and stir to coat them. Cook for 5–7 minutes, stirring occasionally, until they start softening and becoming golden.
- Put the hotdogs on the grill and turn occasionally until ready.
- Season & add the flavor
- Sprinkle in the South Carolina BBQ rub, coating the onions evenly.
- Stir in both the Dijon and wholegrain mustards.
- Let it cook for another 2–3 minutes, letting the mustards cook down slightly.
- Deglaze with beer
- Pour in the Budvar beer to deglaze the skillet. Scrape the bottom to lift any tasty bits.
- Let it simmer for 5–10 minutes, until the liquid reduces and the onions are glazed and soft.
- Warm through your hotdog buns and load up with the hotdogs, onions, ketchup & mustard! Enjoy!
