Then, we introduce pineapples spit-roasted over open charcoal. By flame-scorching the fruit to the point of caramelisation, we unlock a rich, smoky complexity that traditional spiced rums simply can’t reach. It’s tropical, it’s deep, and it’s unapologetically bold.

So how is it made?
To create our Flame Roasted Pineapple Spiced Rum, the process begins by fermenting and distilling a base rum spirit entirely from scratch. This base is then used to macerate a fragrant blend of cinnamon, orange peel, lime peel, dried ginger, tonka bean, and vanilla.
Simultaneously, fresh pineapples are spit-roasted over hot coals and basted with a homemade pineapple caramel until golden and caramelised. These roasted pineapples are then infused directly into the caramel for one week. After straining, this rich pineapple essence is blended with the spiced spirit and water, then finished with additional homemade caramel to balance the flavor profile and achieve a final strength of 42% ABV.
